Perilla Red is a kind of natural red edible color, which is made from natural dried Lamiaceae annual herbaceous plant perilla leaves through an extraction, concentration, refining and sterilizing processes. Its main compositions are shisonin and shisolanin. It is a red to red purple liquid or powder with special aroma. It can be dissolved in water and water-alcohol solutions. The color is date red in acid, red brown to brown in neutral, and green in alkaline. It has good heat, light and salt resistance and certain antisepsis function. It can be used in salted prune (dyed red), pickle, syrup, beverage and sirup as a colorant.
